Panna cotta means cooked cream in Italian and this is absolutely one of my favourite desserts after Tiramisu. The options and flavour variations are endless from simple vanilla and coffee to fruits such as strawberry or  blueberry or Mango. The best part is that it is one of the easiest desserts to make in just 30 minutes.

 I have been making panna cotta forever! Actually, it’s one of my 6year son’s favourite desserts. So, when I saw these gorgeous mangos in my kitchen I knew I had to do something special with them.

 Step 1 – mango layer

1.     Take 2 pc mangos. 






2.     Add mango flesh to a blender and make puree until smooth. Set aside.

3.     In a small bowl, add mango juice and 1 tsp gelatin on top.

4.     Wait 5 minutes for gelatin to soften and then mix with a spoon.

 (I recommend giving it a taste at this stage. If you prefer more sugar, stir it in. If not, you can add more lemon juice or just leave it as is.)

5.     Prepare 3 serving glasses and place them in bowl place using a support or a muffin pan

6.     Carefully pour the mango mixture into each glass almost up to the rim of each glass

7.     Place in the fridge for at least 2 hours, or until set. 



 

Step 2 strawberry layer 

1.     Take 4/5 pc strawberry

2.     Add strawberry flesh to a blender and make puree until smooth. Set aside.

3.     In a small bowl, add strawberry juice and 1/2 tsp gelatin on top.

4.     Wait 5 minutes for gelatin to soften and then mix with a spoon.

5.     Carefully pour the strawberry mixture into each glass almost up to the rim of each glass.

6.     Place in the fridge for at least 2 hours, or until set. 


Step 3 Panna cotta layer

1.     Take 1 cup thick cream

2.     Dissolve 2 tsp gelatin in the cold milk. Let it soak for 5 minutes.

3.     Take 1/2 tsp vanilla essence/ extract and mix it

4.     Mix it to the cream

5.     In a saucepan add the 1 cup of milk in low heat. Add 1 cup of sugar

6.     Add cream mixture in the milk

7.     Continue to cook until the mixture is well heated through.

8.     Stir the mixture for a creamier texture.

9.     Let the mixture cool slightly

10.  Gently pour the mixture into individual serving glasses

11.  Let chill in the refrigerator for 2 hr

 

The texture of this Mango Panna Cotta is silky soft and smooth. It’s slightly sweetened with a perfect hint of tartness from the mango. The vanilla bean panna cotta layer is packed with sweet aroma from the vanilla bean paste and is the perfect combination to elevate this dessert.
